This Sunny-Side-Up Spicy Avocado Toast is easy, quick, delicious, and oh-so-satisfying, and it will keep your energy going throughout the day!
Toast up a hardy slice of your favorite crusty bread. Smother it with my spicy, creamy, mashed avocado spread. Next, lightly sprinkle with juicy sliced tomatoes, parmesan cheese, and fresh parsley, then drizzle your creation with some extra virgin olive oil. Last but not least, top your scrumptious toast with an elegantly fried sunny-side-up egg!
Rarely do I find the time to cook a full-blown meal at midday. When I don’t have time, this avocado toast serves as a great snack or meal option. I love that this dish feels like a hearty meal but with minimal effort. Just the way I like it!

Time-Saving Tip for Sunny-Side-Up Spicy Avocado Toast
To help things go quicker, I like to prep the avocado spread in advance then I keep it in an air-tight container in the fridge for up to 3 days. I know what you’re thinking, and no worries – the acidity of the lemon will help keep the avocado from browning quickly. You can also limit air exposure by placing a piece of plastic wrap directly onto the spread to help keep the avocado that lovely fresh green color.
As an alternative, you can use a pre-made avocado spread. However, store-bought spreads do usually contain additives and preservatives. So be mindful. I always make my avocado spread when I can, which allows me to customize the recipe to my taste and diet requirements.
Tips for Cooking the Eggs
Cooking eggs can be a little tricky for beginners. I learned to cook eggs from my Grandmother BJ. She taught me to cook the eggs “low and slow.” This means always cooking the eggs at a low to medium temperature, ever-so-slowly and gently. It may take quite a few tries before you master the technique, but in my option, it’s worth it in the end!
You can also skip all of the fancy egg techniques if you like! This Spicy Avocado Toast is delicious using plain-ol’ scrambled eggs or a chopped/seasoned hard-boiled egg instead!

Sunny-Side-Up Spicy Avocado Toast
Ingredients
- 1 slice Thick Sliced Bread I used sour dough
- 1 drizzle Olive Oil
Avocado Spread
- 1/2 large Ripe Avocado pitted and scooped into a bowl
- 2 pinch Coarse Kosher Salt
- 1/2 tsp Lemon Juice or White Wine Vinegar
- 1/4 tsp Jalapeño Pepper (or more if desired) seeds and ribs removed then diced
Toppings
- 1 Sunny-Side-Up Egg (or cooked how you prefer)
- 1 medium Cherry Tomato quartered
- 1/2 tsp Fresh Parsley minced
- 1 pinch Parmesan Cheese optional
- 1 pinch Black Pepper and Additional Kosher Salt for seasoning
Instructions
- Brush 1 slice Thick Sliced Bread with 1 drizzle Olive Oil, then toast until slightly crispy and golden.
- In a small bowl, 1/2 large Ripe Avocado with a fork until it has reached your desired consistency.
- Add to the mashed avocado 2 pinch Coarse Kosher Salt, 1/2 tsp Lemon Juice or White Wine Vinegar, and 1/4 tsp Jalapeño Pepper (or more if desired), then mix until combined.
- Spread the avocado mixture to form a thick layer on top of the toast.
- Place the 1 Sunny-Side-Up Egg cook, and add carefully onto the avocado mixture.
- Sprinkle the quartered 1 medium Cherry Tomato, 1/2 tsp Fresh Parsley, and season with 1 pinch Black Pepper and Additional Kosher Salt if desired.
- Garnish with a drizzle of olive oil and 1 pinch Parmesan Cheese to finish. Enjoy!
