With three kids, I am ALWAYS looking for a simple, quick, and easy way to spice up breakfast, lunch, or snack in a hurry. This Spicy Avocado Toast with Cotija Crumble hits the spot! I like to smother this with gorgeous juicy cherry tomatoes, tart lime juice, fresh cilantro, and spicy jalapeños, all slathered onto a thickly crusted slice of toasted bread. SO GOOD!
Confession time. I was not ‘sold’ on the avocado toast trend until I learned to make SPICY avocado toast. My husband agrees this recipe is what avocado toast aspires to be. In fact, we usually find it difficult to stop at just one toast sometimes, but that’s a good problem to have if you ask me.
Time-Saving Tip for Spicy Avocado Toast with Cotija Crumble
To save time for when I’m in a hurry, I like to prep the avocado spread in advance then I keep it in an air-tight container in the fridge for up to 3 days. As an alternative, you can use a pre-made avocado spread. However, store-bought spreads usually contain additives and preservatives. So be mindful. I always make my own avocado spread when I can, which allows me to customize the recipe to my taste and diet requirements.

Spicy Avocado Toast with Cotija Crumble
Ingredients
- 1 slice Thick Sliced Bread of choice I used sour dough
- 1 tsp Avocado Oil or olive oil
Avocado Spread
- ½ large Ripe Avocado pitted and scooped into bowl
- 1 pinch Coarse Kosher Salt to taste
- ½ tsp Fresh Lime Juice or White Vinegar
- ¼ tsp Jalapeño Pepper (or more if desired) seeds and ribs removed then diced
Toppings
- 1 -2 medium Cherry Tomatoes quartered
- 1 tsp Cotija Cheese crumbled
- ½ tsp Fresh Cilantro minced
- 1 pinch Black Pepper & Additional Kosher Salt if desired
Instructions
- Brush 1 slice Thick Sliced Bread of choice with 1 tsp Avocado Oil, then toast until slightly crispy and golden.
- Mash ½ large Ripe Avocado with a fork until it has reached your desired consistency. (A smooth consistency will be easier to spread onto the toast.)
- Add 1 pinch Coarse Kosher Salt, ½ tsp Fresh Lime Juice or White Vinegar, and ¼ tsp Jalapeño Pepper (or more if desired) into the avocado mixture. Stir until combined.
- Spread the avocado mixture to form a thick layer on top of the toast.
- Place 1 -2 medium Cherry Tomatoes slices, sprinkle 1 tsp Cotija Cheese, ½ tsp Fresh Cilantro chopped, 1 pinch Black Pepper & Additional Kosher Salt if desired.
- Garnish with a drizzle of avocado oil (or olive oil) if desired. Enjoy!

Can’t Find Cotija Cheese: If you cannot find Cotija cheese, you could substitute Feta cheese or even a vegan feta substitute if necessary. Pro-tip: You can roast or warm a small peeled clove of garlic, then rub the garlic clove onto the face of the toast before spreading your avocado mixture. It will add an extra depth of flavor to your toast.
