Encanto Inspired Arepas con Queso

Hola Familia! I am so happy that Disney recently released this exciting recipe inspired by Disney’s Encanto! I’m sharing my experience with you along with some tips and suggestions to make the best-ever Arepas con Queso for your next movie night or even an Encanto party!

I recently learned how to make these for my daughter’s Encanto Themed Birthday, and they were a HUGE hit! Everyone loved them, and they couldn’t get enough. I can’t wait to share the recipe with you as well!

What Are Arepas con Queso?

These warm, cheesy, and delicious little pillows of bread are made of masa (corn flour) and are naturally 100% gluten-free!
In Columbia, Arepas con Queso is served at breakfast with thick, frothy hot chocolate or coffee. You can eat them plain or split the Arepa in half to fill it with a variety of stuffings, such as cheese, butter, beans, or even meat! Arepas are fantastic with a side of eggs or even made into sandwiches and filled with ham and cheese! There are so many ways to enjoy Arepas con Queso.

Storing and Reheating Arepas con Queso

Keep the cooked arepas in the fridge for 3-4 days. They also freeze beautifully in a freezer zip-top bag for up to 1 month (cooked or uncooked). To reheat your arepas, reheat at 350°F (176°C) in the oven to warm through.

My Tips and Suggestions

I did some extensive research when learning to make these for my daughter’s party. To start, I use P.A.N. Pre-Cooked White Corn Meal. It is easy to find in the U.S. at many local grocery stores and online. 

Next, I used sliced cheese in my arepas. I found that slicing the arepas open when they are hot, inserting the cheese, and allowing it to slightly melt before serving is the best way to go.

Lastly, I found that putting the arepas con queso in an Arepa Maker, a toaster oven, or a regular oven and warming them for just a few minutes before serving worked wonderfully. If you make a large batch of arepas, the ones you cooked earlier in the session can get cold. Obviously, you want them all at the same temperature.

Encanto Inspired Arepas con Queso

Warm, cheesy, and delicious little pillows of bread, and filled with flavor!
Servings 7 Arepas
Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes

Ingredients
  

  • 9 oz White Cornmeal
  • 10 oz Warm Water
  • 2 tbsp Butter
  • 3 pinches Salt
  • 4 oz Mozzarella Cheese (shredded)
  • Olive Oil
  • sliced Queso Fresco or White Cheese of Preference (Thinly Sliced)

Instructions
 

  • Place 9 oz White Cornmeal in a medium mixing bowl, then gradually add 10 oz Warm Water, 2 tbsp Butter, and 3 pinches Salt, mixing by hand until the dough becomes sticky. (If too sticky add more cornmeal, if too dry add more water.)
  • Work 4 oz Mozzarella Cheese into the mixture, then scoop out small balls of dough. (Slightly smaller than the size of your fist.)
  • Roll each scoop of dough in your hand to form a ball, then flatten it to approximately 1/2 inch in thickness. Place on parchment paper until ready to cook.
  • Heat Olive Oil over medium heat in a medium-sized saucepan or large cast-iron skillet. Once the oil is hot, add the flattened arepas. Let them cook until golden, approximately 7 minutes on each side. (Cooking on a hot stove should only be done with adult supervision)
  • Transfer cooked arepas to a plate and enjoy!
  • Optional: Top with additional butter, or fill the center with sliced Queso Fresco or White Cheese of Preference.
