Ingredients
9ozWhite Cornmeal
10ozWarm Water
2tbspButter
3pinchesSalt
4ozMozzarella Cheese(shredded)
Olive Oil
slicedQueso Fresco or White Cheese of Preference(Thinly Sliced)
Instructions
Place 9 oz White Cornmeal in a medium mixing bowl, then gradually add 10 oz Warm Water, 2 tbsp Butter, and 3 pinches Salt, mixing by hand until the dough becomes sticky. (If too sticky add more cornmeal, if too dry add more water.)
Work 4 oz Mozzarella Cheese into the mixture, then scoop out small balls of dough. (Slightly smaller than the size of your fist.)
Roll each scoop of dough in your hand to form a ball, then flatten it to approximately 1/2 inch in thickness. Place on parchment paper until ready to cook.
Heat Olive Oil over medium heat in a medium-sized saucepan or large cast-iron skillet. Once the oil is hot, add the flattened arepas. Let them cook until golden, approximately 7 minutes on each side. (Cooking on a hot stove should only be done with adult supervision)
Transfer cooked arepas to a plate and enjoy!
Optional: Top with additional butter, or fill the center with sliced Queso Fresco or White Cheese of Preference.
