These Chewy Ginger Spiced Molasses Cookies are not too sweet, and make a great accompaniment for tea, coffee, or even hot cocoa!

Ingredients
¾cupButter(room temperature)
1cupLight Brown Sugar(firmly packed)
¼cupUnsulphured Molasses
1largeEgg
¼tspVanilla Paste(or extract)
2 ¼cupsAll-Purpose Flour
2tspBaking Soda
1tspGround Cinnamon
1tspGround Ginger
¼tspGround Cloves
⅛tspGround Nutmeg
¼tspTable Salt
Instructions
Using a paddle attachment, cream ¾ cup Butter with a stand mixer until it coats the bowl's sides. Add 1 cup Light Brown Sugar, and continue to whip the mixture until combined. Scrape down the sides of the bowl, pour in ¼ cup Unsulphured Molasses, 1 large Egg, and ¼ tsp Vanilla Paste, then cream the mixture on medium speed until fully combined. Do not over-mix.
In a separate bowl - whisk together your dry ingredients — 2 ¼ cups All-Purpose Flour, 2 tsp Baking Soda, 1 tsp Ground Cinnamon, 1 tsp Ground Ginger, ¼ tsp Ground Cloves, ⅛ tsp Ground Nutmeg, and ¼ tsp Table Salt. Gradually add the dry ingredients to your butter mixture while mixing on low speed until combined. Periodically stop to scrape down the sides of the bowl to be sure that everything is evenly incorporated, and be careful not to over-mix.
Once the ingredients are fully incorporated, chill the dough in the refrigerator for 30 min - 1 hour. Scoop spoonfuls of the chilled dough, rolling into balls about 1-1/4-inch in size. Place onto a greased cookie sheet, about 2-3 inches apart.
Preheat your oven to 375℉ (190℃). Bake cookies for 10 - 12 minutes or until set, but not hard. (You should begin to see a light browning around the edges.) Remove from cookie sheet and place onto a wire rack to cool.
