Dangerously Delicious Peanut Butter Protein Bites

August 15, 2022
Dangerously delicious peanut butter protein bites are shaped into balls and stacked on top of one another. The top having a bite taken out of it to show the delectably soft texture inside.

These dangerously delicious Peanut Butter Protein Bites are not only packed with protein and heavy on flavor, but they’re also naturally Vegan and Gluten-free! I love saving a few of these in the fridge just in case the craving hits for something sweet around 3 p.m. These are great for a quick snack to keep that energy going through the day.

If you like this recipe, you will also love my: Healthy Cardamom-Spiced Mango Lassi. (I also have to race to drink with my Smoothie-Loving 4-Year-Old.)

This recipe is terrific to make with the kiddos as well! It’s quick, easy, and super delicious. My kids are always willing to assist. (I’m suspicious it’s so they can see how many peanut butter bites they can devour before I put them in the fridge.) I can’t blame the kids. I do it too! My husband always magically appears when we are making these. (I’m convinced; he has a peanut butter sensor in his brain).
Needless to say, most of these do not make it to the “refrigerate” step around my house. I’m not kidding when I say that these are irresistible!

However, the kids don’t know that peanut butter protein is good for them. Especially good for my very picky toddler, who refuses to eat meat. I try sneaking protein into her diet in any way I can. So I am glad that she is obsessed and I hope you will be too.

Finding Ingredients

Peanut Butter – You can find many different types of peanut butter in grocery stores and online these days. For this recipe, you can select your favorite peanut butter. Just about any kind will do. I do love the Skippy Natural Peanut Butter brand. Sometimes I also use Jif Natural Peanut Butter. They are both a little less sweet than the original flavors. I prefer these since I like controlling the sweet ratios in the recipe.

If you’re using a peanut-free alternative butter, be sure that you select a “no-stir” option. No-stir is less oily and should give you the consistency you need with these peanut butter bites.

Almond Flour – I use almond flour for both French Macarons and peanut butter bites. So I usually opt for the Super Fine Blanched Almond Flour from Bob’s Red Mill to keep on hand for duel purposes. I have also used Natural Almond Flour for this recipe. It also works beautifully! There is a multitude of options on the market. Be sure to purchase the one that is right for you.

Vanilla Paste – I love this stuff. I use vanilla paste in any recipe possible. It’s thick and brings a heavier vanilla flavor than an extract can and without the alcohol flavor. In my kitchen, I’m currently using Rodelle Natural Vanilla Paste.

If you choose to use Vanilla Extract in this recipe, it will add extra liquid to the peanut butter mixture. If this happens, carefully compensate the additional liquid with extra almond flour if necessary.
